Turn the oven on to 175°C. Melt the butter and then blend it with the milk. Beat the eggs together with the sugar until fluffy, add the warm butter/milk and stir. Add the vanilla extract/vanilla sugar and stir. Mix the bakind soda with the flour and stir it carefully into the batter as you add the coconut flakes.
Now there are two alternatives. You can either add the raspberries and just do a quick stir so the berries remain whole or you can beat the batter with the berries till they're completely mashed and the batter is purple. Personally I prefer the berries whole.
Pour the batter into muffin cups, pop them in the lower part of the oven and take them out after 10-20 minutes. The time they need to bake depends on their size.
